Enjoy These Paleo Foods on Cinco de Mayo

When holidays roll around while on a new diet, it can be a little complicated. However, there are a lot of amazing recipes you can use when it is Cinco de Mayo. While you might not want to have those nachos and margarita, you can still celebrate this holiday with the following tasty dishes.

Chicken or Steak Fajitas

The great thing about Paleo is that you can make just a few adjustments and still enjoy many of your favorite meals. One of the more popular Mexican food options is fajitas, whether you choose chicken, steak, or even veggie fajitas. These typically involve your main protein source, plus grilled veggies like bell peppers and onions. The main difference you are going to make is to get rid of the tortilla, and just enjoy open-faced fajitas. Many people on the Paleo diet also do not eat dairy products, so you might want to skip the sour cream as well, and go for fresh guacamole instead.

Burrito Bowl

Another awesome adaptation of an old favorite is to enjoy a burrito bowl on Cinco de Mayo instead of a burrito wrapped in a flour tortilla. All you need to do is get all the ingredients of your favorite burrito, as long as they are Paleo-approved, and put it into a bowl to eat with a fork. For a burrito bowl, you will typically start with a layer of shredded lettuce on the bottom, then add your toppings. Depending on the type of burrito, this might be ground beef, steak, or chicken, tomatoes, avocado or guacamole, salsa, and any other veggies you enjoy.

Lime Shrimp

If you are just looking for a main dish to enjoy on Cinco de Mayo, why not try some shrimp? This is a wonderful lean protein that is easy to make and can have a Mexican flair for this festive holiday. Lime shrimp will start with shrimp that are peeled and deveined, then add some lime juice, chopped cilantro, garlic, oil, salt, and pepper. You can also give it a little bit of a kick with a little bit of tequila. Marinate the shrimp, then choose your method of cooking, such as grilling or cooking on the stove.

Cauliflower Spanish Rice

Spanish rice is often one of the more popular side dishes for Mexican cuisine, but Is not allowed while on the Paleo diet. However, you can also use cauliflower as your rice component. You can buy riced cauliflower in the store, or throw it in the food processor to do this step for you. You can then make it just like you would your own Spanish rice recipe with rich seasonings, tomatoes, onions, and other veggies.
